What Exactly is a Fatty Acid?

Very simply put, a fatty acid is a chain of carbon atoms bound covalently to hydrogen atoms.  The primary factor in determining whether a fat is classified as being saturated or unsaturated is the ratio of saturated to unsaturated fatty acids contained in a particular fat.  In other words, the predominant fatty acids contained in saturated fats are saturated fatty acids.  As mentioned previously, saturated fats are primarily derived from animal food sources such as cheese, cream, butter and beef. 
Just as there are amino acids that are essential to the body, there are fatty acids that are essential as well.  These include Linoleic Acid, Linolenic Acid, and Arachidonic Acid.  Considering the term “essential” is defined as 1) a nutrient that the body cannot manufacture and 2) the absence of the nutrient leads to a deficiency or diseased state.  Linoleic acid is technically the only true essential fatty acid because it is characteristic of both of these categories.  Although the body cannot manufacture linolenic acid, it has not yet been determined whether or not its deficiency will cause a diseased state.  Arachidonic acid cannot be manufactured by the body either, however, it can be synthesized from linoleic acid.  In the event conditions for the synthesis of arachidonic acid do not permit, skin disorders will most likely occur.
